1. Authentic Local Flavor: The “Yatai” Food Stalls

When the training day is done for the wrestlers, the sumo wrestler is walking through the yatai district. At 7 :00PM, many Yatai are already bustling with crowds.
Yatai stall owners generally open their stalls around 18:00 (6:00PM) and close as late as 2:00AM. The best time to arrive is between 6:30-7:00 PM so that you are not the only people at the table. Why? The social environment is as important as the food.
Seating is typically counter-style. Sitting in close proximity the owner and other customers allows you to watch the cooking process right before your eyes while enjoying conversation with both the owner and fellow diners seated nearby.
The yatai streets are lined with stalls serving Fukuoka's local foods like ramen, oden (a traditional Japanese stew eaten in winter), grilled chicken skewers (yakitori) and tasty egg dishes. These dishes are served on small plates and bowls.
Even the he seems to be getting hungry. While every stall has its charm, here are two particularly popular spots among locals.
Hopping from stall to stall, savoring each one's unique character, is a quintessential Fukuoka experience. When you have finished your meal at one stall, consider sampling food in another stall during the same evening.
1.1 Chatting with yatai Owners at “Hakata Yatai Tsunatsuna”
Hungry the he moves on to visit the “Tsunatsuna”, in the Nakasu district.
He parts the noren curtain hanging at the stall entrance. Noren is a tradition fabric curtain that often features Mount Fuji and cherry blossoms painted in a ukiyo-e style. These quintessentially Japanese motifs add color to the modern appearance of Tsunatsuna, which has a slightly different design from traditional yatai.
The shop name “Tsunatsuna” — the character ‘繋’ (tsuna) means “connection” — embodies the owner's wish for people to connect with each other.
He picks a seat and asks the owner, “What's the popular menu item here?”
The owner recommends “Wagyu Motsu Nikomi.”

This dish features tender wagyu beef offal simmered with vegetables. A mouthwatering flavor is created when the sweetness of the vegetables has dissolved into the broth and then combines with the rich umami of the meat. The more you chew the offal, the more its flavor unfolds, making it perfect to combine with beer.
For his second plate, he orders the “Mentaiko Dashi-Maki Tamago.”

Mentaiko is a Fukuoka specialty made from pollock roe marinated in chili pepper and seasonings.
At “Tsunatsuna”, the owner wraps the marinated pollock roe in a savory egg roll infused with dashi broth. The combination of fluffy, moist egg and spicy mentaiko is exquisite.

He heads next to a neon-lit stall called “Take-chan fr Tsukasa” which features a traditional look, with soft lantern lighting and a red noren curtain, creating a calm, relaxing atmosphere in which to enjoy your meal.
He greets the owner and orders the signature dish, “Hakata Tonkotsu Ramen”, which was also featured on the neon sign.

Tonkotsu ramen is a famous dish that actually originated in Fukuoka. The white, rich broth is made from simmered pork bones, resulting in deep flavor with a clean finish. This ramen pairs perfectly with thin noodles.
For his next plate, he orders the “grilled ramen”.

To prepare this dish, the noodles are stir-fried fragrant, after which they absorb the umami of the tonkotsu broth. It's a satisfying and filling dish packed with flavor aroma.
