Enjoy an Elegant Time and Taste at a Premium Hotel

The vegan menu enjoyed at “THE MARKET F” restaurant in Grand Hyatt Fukuoka is created by the head chef, who is responsible for the creation of the recipes, numerous prototypes, and completion of the dishes.
The “Magenta vegan curry with beets and chickpeas,” one of the selectable main dish at the semi-buffet lunch, is a colorful, beautifully presented, and sophisticated curry. From this spring, diners will offer vegan dishes in each category, including appetizers, soups, and main dishes. The “10 kinds of Kyushu vegetable vegan burger” is available for takeout menu. Soy patties, which are handmade with plenty of vegetables such as lotus root and onions, and avocado are sandwiched between lettuce. It is colorful and extremely satisfying.
All vegan dishes are creative and made to taste great, no matter who eats it.

The Brasserie & Lounge seale in Hilton Fukuoka Sea Hawk offers several vegan menus that use no animal-derived ingredients. One of them is the “Kale and Chickpea Grain Bowl with Avocado Dressing,” available in both the Grand Menu and Room Service. This dish features a beautiful arrangement of barley, avocado, chickpeas, tomato, kale and edible flowers with an avocado dressing. Barley is used, so it’s low in sugar, and the chickpeas and avocado also provide protein. And because the ingredients were selected with their detox effect in mind, it can also be expected to help regulate the intestinal environment (gut microbiome). While it is like a salad, it’s also a satisfying one-plate meal that lets you enjoy a variety of food textures. In keeping with its themes of “Local,” “Fresh,” “Healthy” and “Seasonal,” the restaurant offers seasonal dishes that take advantage of locally-sourced ingredients. The Head Chef also has experience in vegan cooking, and is expected use that experience to develop new vegan dishes that incorporate Fukuoka’s rich food culture in the future.

Canezees Doughnut Factory is an egg-free donut shop. The owner of the store has been working seriously on the concept of doughnuts that he can give to his own children with confidence. The baked doughnuts and energy doughnuts (Heat source series) are for vegans and contain no animal ingredients, including butter. Currently 12 types of vegan doughnuts are available.

The Heat source series takes the form of doughnuts that the owner, a cycling enthusiast, wants for his mountain biking trips. They are high in calories, protein, salt, and gluten-free, and like the rest of the series, handmade with only natural ingredients.

The owner proudly proclaims that his doughnuts are the most delicious, health- and beauty-friendly doughnuts in Japan. With a wide variety of flavors, as well as seasonal flavors, you can eat as many doughnuts as you like without feeling guilty.

Vegan okonomiyaki and other Japanese flourishes

The Japanese dish of okonomiyaki, a type of savory pancake that usually includes a generous helping of meat or seafood, might not seem accessible to those with dietary restrictions. In Chuo Ward, just a short distance from Ohori Park, the restaurant Mimi serves vegan okonomiyaki and yakisoba noodles, which feature cabbage, scallions, and bean sprouts, among other delicious ingredients.

Sushi restaurant “sushi ichitaka” is located near Ohori Park Station. Lunch and dinner are both course offerings and reservations are required and vegan courses have been available since 2025. You can also enjoy rare seafood alternatives.

The vegan course begins with sashimi of salmon, tuna, and squid made from konjac, followed by char-grilled vegetables, a la carte dishes made from soy meat that are made to look like meat dishes such as teriyaki chicken and beef shigureni, and then nigirizushi, makizushi (rolled sushi), and miso soup. The sushi rolls also use vegan crab sticks (imitation crab meat).

The best part of dining here is being able to watch the owner chef cook right in front of you. Enjoy the precious time watching the owner chef, who has been active on the world stage, from his knife work to the way he makes sushi, while enjoying the freshly prepared dishes.

This hideaway restaurant serves creative Japanese cuisine that makes full use of vegetables from Itoshima. Located downstairs from an office building, it’s only a 2-minute walk from the Chikushi Exit of Hakata Station. With an advance reservation, you can enjoy full vegan course.  

Everything from the dashi stock and ponzu vinegar to the syrups used in desserts is made by hand from basic ingredients. Each offering is made using the vegetables of the season, and the wide variety of dishes includes not only flavors that Japanese people may be encountering for the first time, but also old favorites like zaru-tofu and tempura. And every dish is just as beautiful as it’s delicious!

The owner is also involved in the operation of a children’s restaurant and development of the local community, and attracts visitors with dishes that he prepares with his whole heart to suit the ingredients of each day.

Sushi lovers can also find vegan options at the newly opened Sushi Shima on the northern side of town, close to Nishi Park and the beautiful Hakata Bay waterfront. International flavors to spice up your trip

Rota Café began from a recognition of the importance of food in the quest for beauty and health. All the meals offered here are vegan cuisine that uses no animal-origin ingredients. Based on a keen awareness of “local production for local consumption,” they’re carefully prepared by hand, using domestically-produced ingredients, vegetables from Itoshima, seasonal ingredients, and natural ingredients as far as possible. Each of the dressings and sauces is also hand-made.

Rota’s signature plate dishes feature a main dish that changes each week, and include tofu hamburger, cutlet of kuruma-fu (a type of wheat gluten cake), soy-meat chicken nanban (fried soy-meat chicken with vinegar and tartar sauce), and mixed-grain millet veggie fish, and are served with two side dishes, a colorful salad and brown rice. Taste is important, of course, and Rota also insists on an attractive presentation and satisfying volume.

Rota’s moist, rich cakes are highly recommended. The restaurant has a wide selection of gluten-free dishes and foods made without the “five pungent roots (in Buddhism or Taoism),” and can offer course meals and boxed lunches.

BUGORO All Vegan is run by an owner who is an animal rights vegan and respects the rights of animals, and has continued to prepare vegan cuisine for more than 20 years. The restaurant offers a menu that includes Hakata ramen topped with vegan ham, creamy, rich-tasting dandan noodles (ramen with spicy soup), highly-acclaimed gyoza dumplings, and lovely sweets, all made to vegan specifications. 

The soft, sticky ramen noodles are served in a rich soup. The chef is particularly confident about his gyoza, which he makes by hand the same way he makes it for his family. Customers say they’re the most delicious in Japan! And parfaits, cakes and other sweets are made with plenty of vegetable cream, showing that the there’s no need to use cream, butter or eggs to make truly delicious desserts.

BUGORO also offers a wide selection of low-gluten foods, and rice-powder noodles can be used in place of the wheat noodle type. The restaurant also offers ramen without the “5 pungent roots (in Buddhism or Taoism).”

Founded in 1980 as a single pasta restaurant in Tenjin, Fukuoka City, Pietro has grown into a national Italian restaurant with 43 branches throughout Japan. The restaurant offers original cuisine that is a collaboration of authentic Italian dishes and unique Japanese tastes. You can enjoy Japanese-Italian cuisine, including original pasta creations, that cannot be found in Italy.

“Spicy Nasu (Eggplant)” has been a popular long-selling menu item since its launch in 1984, and “Eggplant and Soy Meat with Spicy Tomato Sauce” is one of the new pastas without animal-based ingredients. Sprouted soybean meat seasoned sweet and spicy with soy sauce, sugar, and chili pepper is combined with juicy textured eggplant. Red miso is used as a secret ingredient to enhance the richness of the sauce and give it a satisfying, deep flavor. The well-seasoned sauce is very satisfying when tossed with pasta.

The “PIETRO x Soycle Eggplant and Soy Meat With Spicy Tomato Sauce” is also sold as a pre-packaged food, so it can be purchased at the store as a souvenir.

Takamiya Hanten is a budget-friendly Chinese restaurant that’s popular with local residents and offers an all vegetarian menu. Located in front of Takamiya Station, its large variety of menu includes sweet-and-sour pork, mapo tofu, Szechuan-style twice-cooked pork and hot-and-sour noodles. Many local customers become “regulars” after just one meal, and it has a taste that’s enjoyed by everyone, young or old, and both men and women. If you ask when you order, almost everything can be prepared as a vegan dish, without using eggs or milk, or without onions, leeks, garlic or the other “5 pungent roots.”

The set menu at lunchtime features not only a main dish, but also a small dish, soup, rice and pickles, and is a satisfying meal. Many customers may be surprised by how many dishes are included in the menu, as well as its delicious flavor. In addition, new dishes like Chinese rice dumplings (chimaki), which are not shown in the menu or the meal-ticket machine, are also added from time to time.

Chari’s Place, just a 6 minute walk from Yakuin-Odori Station, is a Sri Lankan restaurant run by an owner from Sri Lanka. The owner, Chari, studied Sri Lankan cuisine at a family-owned restaurant. After coming to Japan, he trained in izakaya and other restaurants, and in 2020, he opened his own restaurant, where he serves pure Sri Lankan cuisine. In particular, his “Vegetarian Curry” is perfect for vegans, since he uses absolutely no animal-derived ingredients and keeps the tableware and other utensils separated from other foods.

The colorful dish, which consists of curry and multiple side-dishes, is most delicious when eaten with a little bit of each of these items mixed. After a meal, Chari recommends spicy Samahan tea to warm the body. If you make an advance reservation, Chari’s Place can also prepare a vegan menu.
